Does anyone else’s child wake them up, waving a prepackaged muffin packet in your face, asking you to open it, at 2 in the morning?
No, just mine? HA ok!
Now granted that only happened twice. Now it seems as though he has figured out how to open them himself, so I roll over in the morning only to find TWO packs of empty muffins in my bed! He automatically comes back with, “Mom I just LOVE muffins!”
YALL, my 3 year old is obsessed with those chocolate chip, processed muffins in a package! I mean OBSESSED! He wants to eat them all day every day!
“Mom, can I have a pack of muffins, JUST ONE PLEAAASEE!” This is after he’s already had his two in bed.
Yes, I do let him eat them…because come on, the kid loves them and he eats pretty good else where (most days).
BUT, I have found a way to get around him eating them EVERY morning!
This recipe is a GREAT recipe to keep in your recipe book. Am I the only one who still has hand written recipes. What can I say, I have a little old soul in me, I LOVE IT!
These muffins have NO sugar in them.
(except when you add the chocolate chips, BUT you do NOT have to add those in. These muffins are just as yummy without them, but I can’t “fool” my kid if they are not in there…is that wrong? ha Oh well.)
These muffins also start with Whole Wheat Flour!
Yes..getting some good grains in that belly! I love me some whole wheat flour!

I mean these things are YUMMY and HEALTHY. What more could you ask for? Oh maybe the fact that this recipe will make over 50 mini muffins! and 5 regular sized ones, you know so you can eat some too, and trust me you will want to!

Have you ever froze something, thawed it out, and then threw it away? One time I froze some left over cupcakes and took them out a week later, and once they thawed they were wet and sticky, and just NOT GOOD.
These muffins DO NOT do that. Once thawed, they are the exact same as the day they were baked. Warm them up a little and you would never guess they have been FROZEN and THAWED!
Yall, these freeze SO well!
The first time I made these muffins, and realized how many the recipe made, I had the same look on my face as you probably just did! ha
BUT, I came up with a GREAT idea that worked amazing for my 3 year old.
I bake them in a mini muffin pan (cause what kid wants to eat a full size muffin. Eye roll) and I package them in small Ziploc baggies (which I reuse, because I keep these muffins on hand at all times, and I’m also saving the planet, a little) with 5 muffins in each bag.
I put all those baggies in a gallon size Ziploc and suck out all the air. I think I need to look into a vacuum sealer, cause yes I use my lungs to do this haha. And lets just say, I DO NOT like the taste of plastic bag!
And I keep them in the freezer! My Husband will pull out one baggie before he leaves for work in the morning and place it on his little table, and they are thawed by the time Westin wakes up.
He knows exactly where to find them and he can open the bag all by himself (which was nice for when he couldn’t open the other muffin packets).
Caught him in the middle of chewing these yummy things!
He LOVES these, so do I, and so does my littlest one!
I love having an easy, HEALTHY, go to breakfast for my children and myself. It makes mornings go by so much smoother and I know we are all getting the nourishments we need! (As opposed to loading up on sugar first thing in the morning!)
Healthy Chocolate Chip Mini Muffins Recipe
- 3 Ripe Bananas
- 1/3 cup Plain Greek Yogurt
- 1/2 cup Honey (Local if possible, my parents collect their own so I always have Local Honey on hand! Great perk!)
- 2 Eggs
- 2 Teaspoons Vanilla
- 1 3/4 cups Whole Wheat Flour
- 1 Teaspoon Baking Soda
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Salt
- 3/4 cups Mini Semi-Sweet Chocolate Chips (optional, these muffins are even great without)
- Preheat oven to 375 degrees.
- Spray your muffin pan with cooking spray (or line with liners) If you spray your pan well, these muffins will slide right out (I love that)
- Mix your Dry Ingredients together and set aside.
- Smash up your Bananas, and add in yogurt and honey. Mix together.
- Add in Eggs and Vanilla.
- Fold in your dry ingredients and mix well but do not over mix!
*This will be a thick batter! That’s what you want.
- Add in your Chocolate Chips and start scooping into your tins.
*What’s better than a mound of mini chocolate chips! MMM.
Healthy, right, sorry! haha
- Fill about 3/4 of the way and Bake for 15 minutes.
*Some of these were a little more than 3/4 full but that’s ok. It just makes a little bigger muffin.
Let these cool, and serve or prepare them for the freezer and enjoy any time! Let them thaw for about 30 minutes if you pull them out of the freezer.
I hope you enjoy these as much as I did, and I hope your Littles enjoy them as much as mine! But that may be kind of hard, cause they LOVE these!
